Vegan, Cooked, Serves 4-6

Ingredients
♥ 8 c. Vegetable Broth or Water
♥ 1 Sweet Potato, peeled & diced small
♥ 3 Tomatoes, peeled & diced
♥ 1/2 Onion, diced
♥ 2 c. Black Beans (pre-cooked or canned)
♥ 1 c. Corn, fresh or frozen
♥ 2 T. Miso Paste (any color)
♥ 1 T. Chili Powder
♥ 1 T. Cumin Powder
Add after soup has cooked
♥ 2 Avocados, peeled & diced
♥ 1 c. Cilantro Leaves
Directions
Put the first set of ingredients in a large pot and bring to boil. Reduce the heat and simmer on low for 30 minutes, or desired tenderness of vegetables. Season with salt and pepper to your preference. You’ll need more salt if you used water instead of broth.
Add the avocado and cilantro before serving.
