
Vegan, Raw, Serves 4
This meal is rich, creamy, and when served slightly
warm, is really satisfying! It's an excellent
transitional recipe for those new to raw foods.
Alfredo Sauce
♥ 3/4 c. coconut water
♥ 2 T. Lemon Juice
♥ 1 clove garlic, peeled
♥ 1 t. salt
♥ 1 c. raw pine nuts (soaked for an hour)
♥ 1/4 t. nutmeg
♥ 1/4 c. young coconut meat
♥ 1 t. yeast
♥ 1 t. raw honey (2 t. if you want it sweeter)
♥ pinch of all spice
♥ pinch of pepper
Directions:
Put all the above ingredients in a blender and blend
until very smooth. If using a vita-mix, this also
warms the sauce and it's ready to serve over
noodles. Otherwise, slightly warm in pan or
dehydrator before serving.
Other Ingredients:
♥ 1 Red Bell Pepper, diced
♥ 1 c. Peas (warmed in warm water if desired)
♥ 4-6 zucchini
Peel the zucchini and make them
into noodles using a vegetable spiral
slicer, mandoline,
or creative knife work.
Put noodles on plates, mix with sauce and top with
bell peppers and peas or mix all ingredients
together. Serve slightly warmed.
