Vegan, Raw, Serves 3-4

1 1/2 c. walnuts
(raw)
2 Tbsp. soy sauce (or Nama Shoyu)
2 tsp. cumin seeds (ground or whole)
1/4 tsp. chili powder
dash of cayenne pepper (optional)

6-8 butter leaf lettuce (or other
large leaf lettuce)
1/3 onion, chopped
1 tomato, chopped
1 bell pepper, chopped
1 avocado, peeled, pitted, & sliced
handful of cilantro leaves
salsa of choice (optional)
With a knife, chopper or food
processor chop walnuts. In a
bowl, mix together soy sauce, cumin
seeds, chili pepper and cayenne.
Using the lettuce as the taco shell,
fill with walnut "meat", chopped
veggies, cilantro leaves, and salsa
(optional).
Enjoy! These are quick, delicious,
and remarkably satisfying.
